Preheat your oven to 400o and butter and flour (or use cocoa) a 9 x 13” pan. In a mixing bowl, sift together 2 cups of flour and 2 cups of sugar. Set aside.
Add these ingredients together in a saucepan and bring to boil: 1 cup butter
4 tablespoons cocoa
1/2 teaspoon salt
1 cup water
Cool and add the cocoa mixture to the flour and sugar mixture. Beat for 2 minutes.
1/2 cup buttermilk
1 teaspoon baking soda 2 eggs (slightly beaten) 1 teaspoon of vanilla
Beat until combined.
Pour into your prepared pan. After I pour the batter into the pan, I like to add 1 cup of chocolate chips and slightly swirl them into the batter.
Bake for 25 minutes or until a knife or toothpick comes out clean. Cool slightly - NOT all the way.
While the cake is baking, make the icing:
Put in a saucepan and bring to boil: 6 tablespoons milk
1/2 cup butter
3 tablespoons of cocoa.
Pour into a mixing bowl and add 1 lb of powdered sugar and 1 teaspoon vanilla. Beat well.
Pour the icing onto the barely cooled cake.
Allow the cake to cool before cutting it into slices.
